You're pre-diabetic? Are you working with a nutritionist who can help you choose the right diet? Diet is very important for diabetic patients. A high carb diet could potentially land you into some trouble down the road, especially if the carbs are mainly simple carbohydrates which turn to sugar in the body. You might benefit from eating more whole grains and delete the refined carbohydrates. But like I said, you might have to get advice from a nutritionist who can help you find a diet that meets your energetic needs without causing the diabetes to become worse. Eating protein and veggies won't give you those mood swings like the carbs will, that is, if the carbs are simple carbohydrates, such as white bread, cookies, pastries, some breakfast cereals, pancakes, waffles. There are healthier alternatives out there. You just have to look for them. Good luck!
