Hi Racer

There's this place called 'The Gowrie Mountain', which was pronounced such that you might have thought it was spelled 'Gaarie'. I suppose there is a connection between that and Gary's Junction, but I'm not sure. Certainly your husband will be quite familiar with Jondaryan, where the strikes of the 1890s started. I come from further out that way.

I like Melbourne. Not like Sydney where everyone (well, maybe not everyone) is rude and in a hurry, half dead or brittle from too much botox, talking about their time management and their real estate.

I have just been through "The Women's Weekly Best Ever Recipes", and such is the decline that there is no mention there of pikelets, scones or rissoles. Makes me nostalgic for the days when the only place you could buy olive oil (and opium) was the chemist, although that was a little before my time.

If I was trying to make rissoles I would have on hand
Half (salad) onion finely copped
grated carrot, or
grated beetroot
(anything like that)
mince
1 egg
herbs
Oil for pan

Make sure the onion is finely chopped. Combine mince, grated vegies, herbs and beaten eggs, salt and pepper and knead (is I guess what you do) until it's all mixed up. Coat with flour, and flatten each rissole a little because they tend to burn on the outside and you don't want them raw inside. Don't make them too big. Perhaps you can cook them in a slow pan with a lid on if necessary, but you don't want them to stew either.
