The discolouration of the yolk has to do with the way you're hard-boiling and cooling the cooked eggs. It's a chemical reaction caused by over-cooking, I believe.
I don't know of a sure way to know what has been fed to the chickens that laid your eggs.....if you can find them, free range eggs are better for you, tastier, and virtually guaranteed to be free of "additives".
