Greg,
I lived in Utah for over 20 years and never heard anything about nuked fish in St. George. My daughter's in college in Cedar City, about an hour north of St. George. Zions National Park is very close; absolutely gorgeous; very awe-inspiring. You should miss the crowds since school's not over there yet.

Don't know if anything's playing at the Tuachan ampitheatre, but it's definitely worth checking out.

Bryce Canyon is my personal favorite but is a little further away from St. George. Bryce is a great place for peace and solitude--no matter how many people are around you can always find a place to meditate.

I'm jealous.
