I don't see why you can't take yourself to the doctor. If you are your mother's dependent (insurance-wise) and 18 or over you should have your own card. If not, you can copy the info. off your mom's. If you're really worried about her finding out you'll have to snag the Explanation of Benefits from the mail before she sees it.
Another thought--your doctor's office probably has all your insurance info. already.
