How about saying at the beginning that you'd like to shake his hand and give him a kiss on the cheek. (you know, quick European-style). I did that on my last day with a previous therapist, long ago, and I'm still glad that I did. I felt that i was showing him my love and appreciation far more than I could have with words alone.
