You probably don't have Celiac Disease because if you did anything made of wheat would send you to the hospital.

But it is very possible you have gluten sensitivity, which is sort of like Celiac-lite. In that case you can eat wheat and not know that it is hurting you, not know that your mood issues and brain fog and tiredness are being caused by it.

The simplest test is to avoid anything made of wheat or gluten for 2 weeks and see how you feel. Then start wheat again and see what happens.

A simple blood test will show if you have antibodies to gluten. If your immune system has produced antibodies to gluten, then it means you are sensitive to it and it also means you probably have leaky gut syndrome, where whole food molecules are getting through the intestinal lining before being digested first. Gluten can cause that kind of damage to the intestinal wall. It is repairable.
