If you're vegan, then you have nothing to worry about at all. The prohibited foods are almost all meat and dairy - aged cheeses and meats. I know they say no bouillon, but I think it's only meat bouillon that's a potential problem. And even if vegetable bouillon were an issue, just buy canned vegetable broth.
MSG is fine. Why are you worried about MSG? There are very few vegan foods to worry about - fava beans (never had them in my life), marmite (I don't even know what this is, some British thing), soy sauce, but only over 1/4 cup per serving. That's about it.

Don't stress about the MAOI diet. It's really not a big deal.
