Hi Btnd:
Flax seeds contain about 35 percent oil by weight, the highest of any seed or vegetable. 40 grams(about 1.5 oz.)will supply 14 grams (the equivalent of 1 tablespoon of oil). Grinding flax seeds may also be superior to pure oil because it also contains all the fiber of the seed which is not present in a bottle of flax oil. Also, flax seeds contain health promoting substances called lignans which are not present in the pure oil. They sell high lignan flax oil, but grinding flax seeds will give you more. Don't grind too much at one time-once the oil is exposed to air rancidity will start to take place. Alpha linolenic acid- the main fatty acid of flax oil-is very unstable when exposed to oxygen,light,and heat. Always refrigerate the seeds after grinding. I put mine in the freezer. I also refrigerate the unground seeds.
A coffee grinder seems to be the method for grinding.
