Grilled Zucchini recipe

Posted by Cass on September 27, 2008, at 20:53:03

This may sound really basic, but you won't believe how delicious it is. Yum! I could eat it all day! I use my grill pan on the stove for this, but you could also use the barbie.

INGREDIENTS
1 large zucchini
1/4 cup Italian-style salad dressing

DIRECTIONS
Slice zucchini in to 1/4 inch slices. Toss in a bowl with Italian dressing.
Place on a hot grill and grill about 4 to 5 minutes or until nice grill marks appear and the zucchini is slightly limp. Serve and enjoy.

I adapted this from a Japanese eggplant thingo.

You need some white miso, the sweet stuff.
Mix 1/3 of a cup of it with the same amount of mirin.
Mix

Halve some zuchinnis lengthwise and fry a bit.
Dollop some of that mixture above on each and cook in a hot oven for maybe 10 minutes.

It's a bit gross and sweet but it feels nutritious.
Then you have rice, and terryaki fish with it.

Thanks, Sig,
This sounds good!! I have the miso, and I just googled mirin to see what it is. Do you think Trader Joe's would have it?

It might.
Mirin is not really obscure.
I guess it's made from rice wine and sugar.
If I didn't have any and I had saki, then I'd put palm sugar in with the saki....that would be similar.

So simple too! I love recipes with just a few ingredients!

Phillipa,

How long have you had no sense of taste? Do you have a sense of smell?

I am so sorry to know that. So if you had ice cream, it'd just be cold in your mouth? And tea would just be hot?

(((((((((you))))))))))

luv, Kath

Cass wish I did. Went to a doc in Washing DC and one In Wake Forrest NC And both said might have been a virus. But hadn't been sick. It's horrible though. Love Phillipa I've searched the web for years and figure it out no head trauma as that was one reason.
