Some things to do with summer tomatoes?

Posted by llurpsienoodle on August 15, 2008, at 15:18:50

I've got little yellow pear tomatoes and red cherry tomatoes. Last night I made a tomato basil salad with olive oil, salt, basil, tomaters.

Any other ideas?

p.s. my very first garden veggies. I'm so proud of each little tomato!

Hi!
My first thought was
gazpacho!! It needs exclamation points because I love it so much.
However, doesn't sound like you have enough for that.
I do know what you mean about being proud of each little one tho! It makes you feel so productive!

Good luck!

Yeah Ll!

Isn't it great! Actually the way you made your salad is my favorite way to eat them other than just popping them in my mouth whole.
My kids eat them as snacks, sometimes dipping them in ranch dip or bean dip.

I sometimes add them to creamy cucumber salad.
I know some people like to add them to pizza, bruchetta, focchia , and macaroni salad .
If you get to the point where you have too many, don't let them go to waste! Just wash them, slice them in half, squeeze out the seeds, try to save the juice by straining it, and throw them in the freezer with the juice in freezer bags to use for sloppy joes, chili or anything you use canned tomatoes for.
But know with kids, guinea piggies, and my cockatiel, I never have any left!

Isn't that the best feeling? You should be proud.
Gardening is the only thing that never made me panicky and feel like I should be doing something else.
I had a suggestion but when I read your post
I saw that's what you did.
I add chickpeas though, and a little fresh parsley
and a teeny bit of lemon juice.

Congrats on your garden results.

How about fried green tomatoes? Yum.

Also, you can scoop out the inside of tomatoes, mix with already-cooked rice, lightly sauted green onions, chopped or grated cheddar.

Then stuff the mixture back into the tomato shell & bake to melt the cheese. Or they're good just as is unbaked.

Hugs, Kath
