Mostly trying to keep myself busy with whatever small things I can manage manage around the house, but I would like to move back into volunteering / working eventually. At least initially, it would have to be something that I could do only when I felt up to it.

I work but my job is currently up in the air (new government that is cutting left and right) and its causing a lot of stress. I never feel completely well unless I feel useful / needed. Not sure what I am going to do down the road.

I started at university. Distance learning. Studying 2 1/2 hours a day at home. Rest of the day like you I manage things around the house, work out or play golf. I will need 5 years for my bachelor when I study at this pace. But my parents tell me no one asks how long you studied. I hope they are right.

I've only had one person ask and I just said that I was in school part-time and working odd jobs to pay for it. This isn't true, but it's a reasonable excuse (many people do this), and it's none of their business IMHO.

Sure you can. Why not? I just say I was working odd jobs here and there (i.e. tutoring) but that I didn't keep contact with those I worked with. Actually this is true. I was working some odd jobs, but that wasn't the exact reason.Bottom line (to me) is that you can't lie about how long it took you to complete the degree, but the exact reasons why it may have taken longer than usual are none of their business.
Other possible excuses that sound good include:- financial reasons
- looking after family members
- assistance at home
- break to reorient, build skillsOn a resume, I just put a completion date and (like I said) after dozens of interviews, I've only had one person ask. I am currently employed (although I am looking for a different job).
Lots of people complete degrees online at a slower pace, for a variety of reasons (family, work etc). If you feel uncomfortable with stretching the truth, you can just rephrase your reason as 'I needed to help out with an illness in the family.' That is true!! Nobody needs to know that that person was yourself. You are in your family. What are they going to do? Ask for the phone number and sworn affidavit of the family member you helped? Nonsense!!Be optimistic and keep going!

I would urge you not to mention that you had a mental illness (unless you believe the company has an affirmative action for hiring such individuals).
Even reframing this as "personal illness" or "illness in the family" is fine.
