Meat and potatoes recipe- [Abilify] optional.

Meat and potato dinner for 2-4

3 pound boneless leg of lamb- trim all the yucky bits and membrane and tendon you can.

6 cloves of garlic cut into thin slices.

salt pepper, whatever herbs you've got handy- I used crushed pepper corns, kosher salt, a little dried thyme and some steak rub (cupboard is kinda bare of dried herbs, but thyme and rosemary would be AWESOME!) make about 1.5 TBSP, saving half to season the potatoes.

season inside and outside with the spices, use a small sharp knife to poke holes in the meat, and stuff a sliver of garlic in each one. put some on the inside of the leg if you can. have fun- put some of the salt seasoning in the little holes too, if you're feeling ambitious. this is a mess. oddly satisfying- you'll see! (10 mins) You can even leave it in the fridge overnight at this point to get really zesty!

1 russet potato per person- cut into BIG CHUNKS! Whatever other veggies you can dig up. Carrots? Sweet potatoes? Squash? Mushrooms? onions? put in a big bowl. pour some olive oil on top (however much you feel you deserve). Add the reserved salty seasoning and toss well.

Preheat oven 400degrees celsius HAHA just joking. Fahrenheit.

put Roast on a oiled roasting pan. If your roast is tied together really well, it will probably take about 1 hour + 15 mins standing under Aluminum foil for medium. carve in thin slices. It's not an easy thing to carve, cause the meat grows in all different directions, but I hope yours is nice and tender, so that it doesn't matter how silly your slices look- just put a pile of lamby chunks on a plate, surround with the vegetables, add salad to fill up the plate.

Big potato chunks need 30 mins to roast to tender. Either add them at the beginning and dig them out, or add them halfway through. Smaller veggies need less time. I added the onion chunks about 10 minutes before pulling the whole thing out.

green salad (or tomato salad) (10 mins)

Voila.... they will be so! impressed! 30 mins prep, plus 1 hour of oven, plus 15 mins of resting time for the juices to be resorbed into the meat.

Note: [Abilify] may be added at the discretion of your pdoc.
