Apple Buckwheat Pancakes

Not exactly what you asked for, but the keys are not working the batter too much and letting it sit for the time recommended. This one is good and simple - my favorite traits for a recipe.

Good luck...

2 cups of pancake mix
1/4 cup buckwheat pancake mix
1 1/4 cups water
1 Granny Smith apple, diced
Butter and maple syrup

Heat pan or griddle. Stir together - don't overmix - pancake mixes and water and let stand for 5 minutes. Ladle about 3 ounces of batter on griddle and distribute apple over exposed side. Turn when bubbles start to break, taking care not to pat the pancakes. Cook until they spring back when touched.
