There are two concerns, and you're only looking at one. You can achieve a fairly stable blood level by taking a drug on an interval similar to its half-life. By inference, your blood level will vary by roughly a factor of two. Prozac has a half-life of roughly a week, so that's round about the maximum interval you might consider between doses.

The other factor is total dose. If you take but one 20 mg capsule per week, your daily dose averages only ~3 mg. I would think that dose insufficient to have a very powerful clinical effect.
