The weight will come off. And it should come off pretty rapidly -- just eat well and exercise regularly. I, too, was on Zyprexa and gained quite a bit of weight...I've been off for one month, and I've lost 12 pounds.
I don't know too much WHY it causes weight gain...but I think it makes you hypoglycemic (hyperinsulism or something), and your body wants to return to a normal sugar balance so you eat more...also, there is something to do with histimine but I don't know! sorry!
But don't give up! It sounds like you lead a pretty healhty lifestyle, so you shouldn't have a problem with losing the weight!
